Recipe for Wada Pav

Ingredient for Wada:

1)   3 boiled and mashed potatoes

2)   2 green chillies – chopped

3)   1 tbsp grated garlic and little ginger

4)   2/3 tsp mustard seeds (Rai / Sarson)

5)   1/4 tsp asafoetida (hing)

6)   Little curry leaves (kadipatta)

7)   1/3 tsp turmeric powder (Haldi)

8)   Oil for frying

9)  Salt to taste

For the Batter

1/2 cup Bengal gram flour (Besan)

1/8 tsp turmeric powder (haldi)

A pinch of baking soda

2/3 tsp oil

Salt to taste

Method

1)      Cut green chillies and pound it with ginger and garlic.

2)      Heat the oil and add the mustard seeds. When they crackle, add the asafoetida and curry leaves and sauté for a few seconds.

3)      Add the pounded mixture and sauté again for a few seconds.

4)      Add the boiled mashed potatoes, turmeric powder and salt and mix well.

5)      Remove from the fire and cool.

6)      Once cooled make pattie of the mixture.

For the outer covering

1)      In a bowl mix 1/2 cup Bengal gram flour, 1/8 tsp turmeric powder, a pinch of baking soda, salt to taste with the 1/3 cup of water. Mix well till it turns into a semi liquid batter so as to form a coating on the pattie.

2)      Dip each pattie into the batter and allow it to coat the batter well over it.

3)      Deep fry in hot oil, till golden brown.

How to serve

Sandwich the Wada between the bun or the Pav and enjoy.
